Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 3/4 cup white sugar
  • 3/4 cup light brown sugar
  • 2 pieces eggs, room temperature
  • 1 teaspoon strawberry extract
  • 15 drops red or pink liquid food coloring Adjust for desired color.
  • 2 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Crunchy Topping

  • 20 pieces Golden Oreos, roughly crushed
  • 1 box (3.4 oz) strawberry Jello powder
  • 4 tablespoons butter, melted

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, crush the Golden Oreos and mix them with the melted butter and Jello powder. Spread the mixture on a plate to cool.

Making the Cookie Dough

  • In a mixing bowl, cream together the softened butter, white sugar, and brown sugar until fluffy.
  • Add the eggs one at a time, fully incorporating each before the next.
  • Mix in the strawberry extract and food coloring.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually combine the dry ingredients with the wet ingredients, stirring just until fully incorporated.

Baking

  • Scoop out portions of dough, roll into balls, and coat each ball in the Oreo mixture.
  • Place on a parchment-lined baking sheet, leaving space for spreading.
  • Bake for 8 minutes. Then sprinkle more Oreo topping on each cookie and bake for an additional 4 minutes.
  • Let cool on a wire rack.

Notes

For a stronger strawberry flavor, consider adding freeze-dried strawberry pieces. Store cookies in an airtight container after they completely cool.
