Ingredients
  

For the crust and crumble topping

  • 2 cups rolled oats Use old-fashioned rolled oats.
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted

For the strawberry filling

  • 2 cups fresh strawberries, chopped Use ripe strawberries for the best flavor.
  • 1/4 cup lemon juice Freshly squeezed is preferred.
  • 2 tablespoons cornstarch Helps thicken the filling.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  • In a large bowl, mix the rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, and salt.
  • Pour the melted butter into the dry mixture and combine until crumbly.
  • Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
  • In a separate bowl, mix the chopped strawberries, lemon juice, and cornstarch, then spread this mixture over the crust.
  • Sprinkle the remaining oat mixture over the strawberry filling.

Baking

  • Bake in the preheated oven for about 30 to 35 minutes, until the top is golden brown.
  • Cool the bars in the pan before slicing into squares or rectangles.

Notes

These bars can be served warm or cold. Consider serving with powdered sugar, ice cream, or yogurt for an indulgent treat.
