  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing well until fully incorporated.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and stir until combined.
  • Fold in the mashed strawberries until evenly distributed throughout the dough.

Baking

  • Use a cookie scoop or tablespoon to drop the dough onto the prepared baking sheets, allowing space between each cookie.
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges start to turn golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be elevated with powdered sugar dusting or a simple glaze. Serve them with fresh strawberries or whipped cream for an extra treat.
