  • 2 cups cooked chicken, shredded
  • 1 can sweet corn, drained
  • 1 cup cream cheese Softened for easier mixing
  • 1 cup shredded cheddar cheese For topping
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • to taste Salt and pepper
  • 1/2 cup chopped green onions For added flavor and garnish
  • 1/2 cup crushed tortilla chips (optional for topping) Adds crunch on top

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, drained sweet corn, cream cheese, and sour cream. Mix well.
  • Add chili powder, cumin, salt, and pepper. Stir thoroughly.
  • Fold in chopped green onions.
  • Pour the mixture into a greased casserole dish and spread evenly.
  • Sprinkle the top with shredded cheddar cheese and crushed tortilla chips if using.

Baking

  • Place the casserole in the oven and bake for 25-30 minutes, or until bubbly and the cheese is melted.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For convenience, consider using rotisserie chicken. Customize spices and add vegetables for extra nutrition. You can prepare this dish ahead of time.
