Preparation

  • Heat olive oil in a large skillet over medium heat.

  • Add ground turkey to the skillet, breaking it up with a spatula. Cook for 5-7 minutes until no longer pink, stirring occasionally.
  • While turkey cooks, blanch broccoli florets in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey or agave syrup, and red pepper flakes.
  • Pour the sauce mixture over the turkey in the skillet and let it simmer for 3-4 minutes.
  • Gently stir in the blanched broccoli until well coated with the sauce. Remove from heat.
  • Serve by placing cooked rice in bowls and topping it with the turkey and broccoli mixture. Garnish with green onions and sesame seeds.

Notes

For a lower-carb option, substitute rice with quinoa or cauliflower rice. Adjust the level of heat by modifying the red pepper flakes. You can store leftovers in an airtight container in the fridge for 3-4 days or freeze components for longer storage.
