Instructions
Preparation
Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or baking spray.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition until fully incorporated.
Stir in the vanilla extract and milk until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined.
Gently fold in the mixed berries.
Pour the batter into the greased loaf pan and smooth the top with a spatula.
Baking
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve with a dusting of powdered sugar or spread a little butter on each slice. Pairs well with tea or coffee.
