Preparation

  • Place the chicken breasts at the bottom of your crockpot, arranging them in a single layer.
  • In a separate bowl, mix together the pineapple chunks, brown sugar, soy sauce, minced garlic, ground ginger, and black pepper.
  • Pour the mixture over the chicken in the crockpot, ensuring the chicken is well coated.
  • Cover the crockpot with its lid. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • If you prefer a thicker sauce, mix the cornstarch with a little water to create a slurry, then add it to the crockpot 30 minutes before serving.
  • Serve the chicken over a bed of rice or with your favorite sides.
