Ingredients
  

Pasta and Meat

  • 8 oz pasta (rotini or penne)
  • 1 lb ground beef or turkey Choose your preferred protein.
  • 1 packet taco seasoning

Vegetables and Cheese

  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup diced bell peppers
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cilantro, chopped

Dressing

  • 1/4 cup lime juice
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Boil a pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside to cool.
  • In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  • Add the taco seasoning to the meat, following package instructions for water addition, and simmer until thickened.
  • In a large mixing bowl, combine the cooled pasta and seasoned meat, then add cherry tomatoes, black beans, corn, diced bell peppers, and red onion.
  • Drizzle lime juice and sprinkle cilantro over the mixture, gently mixing everything together.
  • Serve immediately or chill for about 30 minutes before serving.

Notes

Customize your Taco Pasta Salad with additional toppings such as avocado slices, jalapeños, or extra lime wedges for a personal touch. Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
