  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 medium onion, chopped Enhances flavor
  • 1 cup bell pepper, chopped Can use any color
  • to taste Salt and pepper

Instructions
 

Preparation

  • Heat a large pot or Dutch oven over medium heat.
  • Add ground beef and cook until browned, about 8-10 minutes.
  • Add chopped onion and bell pepper to the pot and cook until soft.
  • Drain any excess fat from the pot.

Cooking

  • Stir in the taco seasoning.
  • Add diced tomatoes, black beans, kidney beans, corn, and beef broth to the pot.
  • Bring the mixture to a gentle boil.
  • Reduce heat and simmer for about 20 minutes.
  • Taste and adjust seasoning with salt and pepper before serving.

Serving

  • Ladle hot soup into bowls and add toppings like cheese, sour cream, avocado, and cilantro.
  • Serve with tortilla chips or a squeeze of fresh lime juice.

Notes

For a lighter version, substitute turkey or chicken for ground beef. You can customize the beans according to your preference. Store leftovers in airtight containers and refrigerate for up to three days or freeze for three months.
