  • 2 cups cooked rice Cold, day-old rice is ideal
  • 1 cup fresh Thai basil leaves Can substitute with regular basil
  • 2 pieces Thai chili peppers, chopped Adjust quantity based on desired spiciness
  • 2 tablespoons fish sauce Can substitute with soy sauce for a vegan option
  • 1 tablespoon oyster sauce Can substitute with a plant-based alternative
  • 1 tablespoon honey
  • 1 teaspoon chili paste
  • 2 tablespoons vegetable oil
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 piece bell pepper, diced
  • 1 piece carrot, diced
  • Salt and pepper to taste Adjust based on preference

Preparation

  • Heat the vegetable oil in a large skillet or wok over medium heat.
  • Add the diced onion, minced garlic, chopped bell pepper, and diced carrot. Stir-fry until tender but still crunchy, about 3-4 minutes.
  • Add the cooked rice, breaking apart any clumps and mixing well to distribute vegetables evenly.
  • In a small bowl, combine fish sauce, oyster sauce, honey, and chili paste. Stir to incorporate and pour over the rice mixture.
  • Add the chopped Thai chili peppers and fresh Thai basil leaves, stirring frequently until heated through and basil has wilted.
  • Season with salt and pepper to taste before serving.

Notes

For a more elegant presentation, serve with a fried egg or grilled chicken/shrimp. Dipping sauces or lime wedges can customize servings.
