Ingredients
  

For the Chicken Marinade

  • 4 pieces boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar

For the Breading

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper

For Frying and Assembly

  • Vegetable oil for frying
  • 4 pieces brioche buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced pickles
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha hot sauce
  • Lime wedges, for serving

Instructions
 

Marinating the Chicken

  • In a large bowl, combine the buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar. Whisk until thoroughly mixed.
  • Introduce the chicken thighs to the bowl, ensuring they are completely submerged. Cover and refrigerate for at least four hours or overnight.

Preparing the Breading

  • In another bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, garlic powder, and ground black pepper.

Frying the Chicken

  • Remove the chicken from the marinade and let excess buttermilk drip off.
  • Dredge each thigh in the flour mixture, pressing firmly for a good coating.
  • Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  • Add coated chicken thighs to the hot oil, frying for about 7-8 minutes until golden brown and cooked to a safe internal temperature of 165°F (75°C).

Making the Spicy Mayo

  • In a small bowl, combine mayonnaise and Sriracha hot sauce until you reach your desired spiciness.

Assembling the Sandwich

  • Once the chicken is fried, drain on paper towels and toast the brioche buns until light golden brown.
  • Spread spicy mayo on the top and bottom of the buns.
  • Add a piece of crispy fried chicken, then layer with shredded lettuce and sliced pickles.
  • Place the top bun on, and your Thai Fried Chicken Sandwich is ready to serve.

Notes

Store components separately to maintain freshness. Leftover fried chicken can be kept in an airtight container in the refrigerator for up to three days.
