  • 1 cup red bell pepper, sliced
  • 1 cup cucumber, sliced
  • 1 cup carrots, shredded
  • 1/2 cup shredded cabbage
  • 1/4 cup fresh cilantro, chopped Can substitute with mint or basil.
  • 1/2 cup creamy peanut sauce Store-bought or homemade.
  • 4 large lettuce leaves or tortillas Use gluten-free tortillas for a gluten-free option.
  • to taste none salt and pepper

Preparation

  • Gather all your ingredients to ensure you have everything ready to go.
  • In a large mixing bowl, combine the cooked and shredded chicken with sliced red bell pepper, cucumber, shredded carrots, shredded cabbage, and chopped cilantro.
  • Drizzle the creamy peanut sauce over the chicken and vegetable mixture.
  • Gently toss all the ingredients together until they are fully combined. Season with salt and pepper to taste.
  • Lay the large lettuce leaves or tortillas flat on a clean surface.
  • Place a generous amount of the chicken mixture onto the center of each lettuce leaf or tortilla.
  • Roll up the lettuce leaf or tortilla tightly to encase all the filling, folding in the sides to keep everything contained.
  • Once all the wraps are rolled up, serve immediately or slice them in half for easier handling.

Notes

You can serve the wraps with extra peanut sauce on the side and fresh lime wedges for a zesty touch. If you have leftovers, store unwrapped ingredients separately in airtight containers in the fridge.
