Ingredients

  • 2 lbs ground beef or ground turkey Choose quality meat for best flavor.
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2-3 tbsp chili powder Adjust according to spice preference.
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional) Adjust for heat preference.
  • Salt and black pepper, to taste
  • Shredded cheese, sour cream, green onions, avocado slices, tortilla chips (for serving)

Instructions
 

Preparation

  • Gather all your ingredients to save time later.
  • Dice the onion and green bell pepper, and mince the garlic.

Cooking

  • In a large pot or Dutch oven, heat a splash of oil over medium-high heat.
  • Add ground beef or turkey and cook until browned, about 5-7 minutes, breaking it into smaller pieces.
  • Add diced onion and green bell pepper to the pot and sauté for 5 minutes until tender. Add minced garlic and cook for an additional minute.
  • Season with salt, black pepper, chili powder, cumin, and paprika. Stir well.
  • Pour in diced tomatoes, tomato sauce, and beef broth, and stir to combine.
  • Bring to a gentle boil, then reduce heat to low, cover, and simmer for at least 30 minutes.
  • After simmering, stir in kidney and pinto beans. Cook for an additional 10-15 minutes.
  • Taste and adjust seasoning as needed.
  • Ladle chili into bowls and serve with desired toppings.

Notes

To store leftovers, let cool, then place in airtight containers. Refrigerate for up to 3-5 days or freeze for up to 3 months. Consider chili variations like vegetarian, pasta chili, or slow cooker versions.
