  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Should be at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon brewed coffee, cooled Use high-quality coffee for best flavor
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese
  • Cocoa powder for dusting
  • Chocolate shavings for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg, brewed coffee, and vanilla extract into the butter mixture, and mix until combined.
  • Gradually introduce the flour mixture into the wet ingredients, mixing until just combined.
  • Gently fold in the mascarpone cheese until evenly distributed throughout the dough.
  • Drop heaping tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Baking

  • Bake for 10 to 12 minutes, or until the edges are set but the centers remain soft.
  • Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
  • Once cooled, dust the tops with cocoa powder and sprinkle with chocolate shavings, if desired.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies in a single layer and transfer to a bag once solid.
