Instructions
Preparation
- Start by slicing the cooked chicken breast into even pieces; this ensures that every bite is equally delicious. If you’re using fresh basil, wash and pat it dry.
Toasting the Bread
- Heat a skillet or a panini press on medium heat. Drizzle a small amount of olive oil on one side of each slice of bread.
Assembling the Sandwich
- On the non-oiled side of one slice of bread, spread the pesto generously. Layer the sliced chicken, followed by mozzarella cheese (if using), and add fresh basil.
- Top with the second slice of bread, oiled side facing outward.
Cooking the Sandwich
- Place the assembled sandwich in the skillet or panini press. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serving
- Remove the sandwich from the heat, let it rest for a minute before slicing in half.
