  • 1 cup pineapple chunks Fresh or canned
  • 1 medium bell pepper, sliced Any color
  • 1 medium onion, sliced Yellow or red for sweetness
  • to taste Salt and pepper For seasoning
  • 1 piece Aluminum foil For creating the cooking packet

Preparation

  • Preheat your grill, oven at 375°F (190°C), or campfire.
  • In a mixing bowl, combine chicken thighs with BBQ sauce, salt, and pepper, ensuring they are well-coated.
  • Lay out a large piece of aluminum foil to create a packet for the chicken and vegetables.
  • Place the seasoned chicken in the center of the foil. Top with pineapple chunks, sliced bell pepper, and onion.

Cooking

  • Seal the foil around the chicken and vegetables to trap the heat and moisture.
  • Cook over medium heat on the grill, or in the oven for about 30-35 minutes, or until chicken reaches 165°F (74°C).

Serving

  • Carefully open the foil packet and serve warm, preferably over rice or with a fresh salad.

Notes

For extra flavor, marinate chicken in BBQ sauce for a few hours or overnight. Use fresh ingredients for best results. Leftovers can be used in salads or wraps.
