  • 1 cup bulgur wheat
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 1 medium zucchini, diced
  • 2 tomatoes, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions and sauté for about five minutes until they are translucent.
  • Stir in the diced carrots and zucchini. Cook for another five minutes.
  • Add the chopped tomatoes, bulgur wheat, paprika, and cumin. Cook for 2-3 minutes.
  • Pour in the vegetable broth and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low and let simmer for 15 to 20 minutes, stirring occasionally.
  • Taste the soup and season with salt and pepper as desired.
  • Serve in bowls, garnished with freshly chopped parsley.

Notes

For added texture, serve with crusty bread. This soup can be easily made in advance and is entirely vegan-friendly.
