  • 2 cups chicken broth Low-sodium preferred.
  • 1 cup heavy cream For a rich and creamy texture.
  • 1 cup parmesan cheese, grated Add more for garnish.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For cooking the chicken.
  • Salt and pepper to taste Salt and pepper, to taste
  • Italian seasoning to taste Italian seasoning, to taste

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced chicken to the skillet, and season with salt, pepper, and Italian seasoning.
  • Cook until the chicken is browned and fully cooked, about 5-7 minutes.
  • Add the minced garlic and sun-dried tomatoes to the skillet, sauté for 2 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Stir in the orzo pasta and reduce heat to a gentle simmer. Cook for about 10 minutes until the orzo is tender.
  • Stir in heavy cream and parmesan cheese, mixing thoroughly until creamy.
  • Add fresh spinach and cook for an additional 2-3 minutes until wilted.
  • Serve warm and enjoy!

Notes

Garnish with additional parmesan or fresh herbs. Pairs well with crusty bread or a light salad for added texture.
