  • 1 package cheese tortellini
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Italian seasoning to taste

  • Heat the olive oil in a large pot over medium heat for a minute.
  • Sauté the garlic until fragrant, about 30 seconds.
  • Stir in the chopped sun-dried tomatoes and cook for 2 minutes.
  • Add the cheese tortellini and enough water or broth to cover it. Bring to a boil.
  • Cook the tortellini according to package instructions, usually a few minutes until tender.
  • Reduce heat to low, stir in the heavy cream, mixing with the tortellini, garlic, and sun-dried tomatoes.
  • Add the grated Parmesan cheese and stir until melted.
  • Incorporate the baby spinach, season with salt, pepper, and Italian seasoning. Cook until wilted and sauce thickens slightly.
  • Serve hot, optionally with a side salad or garlic bread.

Notes

Choose quality ingredients for the best flavor. Feel free to adjust the creaminess with half-and-half or add more vegetables and protein for variety. Store leftovers in an airtight container.
