Ingredients
  

For the Cookie Dough

  • 1 cup ube puree
  • 1/2 cup unsalted butter, softened Use room temperature for best results.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs Use room temperature.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional) Can be walnuts or pecans.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until fluffy.
  • Add the ube puree, eggs, and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using nuts, fold them in at this stage.
  • Use a tablespoon or cookie scoop to portion the dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes or until the edges are golden, and the centers appear set.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure your ube puree is smooth to avoid lumps. Store cookies in an airtight container; they will last up to a week at room temperature, 1 month in the fridge, or 3 months in the freezer. Experiment with mix-ins and toppings for variety!
