  • 1 cup green or brown lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Spinach or kale (optional, for serving)

Instructions
 

Preparation

  • Gather your ingredients and a large pot.
  • Heat a splash of oil in the pot over medium heat.
  • Add diced onions, carrots, and celery, sauté for about 5 to 7 minutes until softened.
  • Stir in minced garlic and cook for an additional minute until fragrant.

Cooking

  • Add lentils to the pot.
  • Pour in vegetable broth and diced tomatoes, add bay leaf and cumin, and stir.
  • Bring the mixture to a rolling boil.
  • Once boiling, reduce the heat to low and let it simmer for about 25 to 30 minutes until lentils are tender.
  • Taste the soup and season with salt and pepper.
  • If using, stir in spinach or kale just before serving.
  • Ladle the soup into bowls and serve hot.

Notes

This soup can be customized with additional spices or vegetables. Great for meal prep and can be frozen for up to three months.
