  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Main Ingredients

  • 1 ½ cups rolled oats
  • ½ cup vegan chocolate chips Use high-quality vegan chocolate.
  • 2 tablespoons plant-based milk (optional) Use if dough is too dry.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened vegan butter, light brown sugar, and vanilla extract. Mix until creamy.
  • Add the all-purpose flour, cinnamon, baking soda, and salt to the mixture, stirring until fully combined.
  • Gently fold in the rolled oats and vegan chocolate chips. Adjust consistency with plant-based milk if needed.
  • Scoop 1-2 tablespoons of dough onto a lined baking sheet, spacing them apart.

Baking

  • Bake for 10-11 minutes for chewier cookies, or 12-13 minutes for firmer cookies. Monitor closely to prevent over-baking.
  • Remove from oven and cool on a rack for a few minutes before enjoying.

Notes

For best results, do not overmix the dough. You can chill the dough for 30 minutes for better texture. Store cookies in an airtight container at room temperature for up to five days, or freeze for longer storage.
