  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda

Wet Ingredients

  • 1 cup orange juice (freshly squeezed)

  • 1/2 cup plant-based yogurt (unsweetened)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar Activates the baking soda.

Preparation

  • Preheat your oven to 350°F (180°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
  • In another bowl, combine the orange juice, orange zest, plant-based yogurt, vegetable oil, and vanilla extract. Mix well until all the wet ingredients are smooth.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Avoid overmixing; a few lumps are okay.
  • Stir in the apple cider vinegar gently to activate the baking soda.

Baking

  • Pour the batter into your prepared cake pan and spread evenly.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Serve with plant-based whipped cream, dairy-free vanilla ice cream, or a drizzle of fresh orange glaze. Consider pairing it with a fresh fruit salad for a citrus theme.
