  • 1 cup natural peanut butter, smooth Make sure it's at room temperature.
  • 1 cup brown sugar
  • 1/2 cup maple syrup or agave syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, brown sugar, maple syrup, and vanilla extract. Mix well until all the ingredients blend smoothly.
  • Add the baking soda and salt to the mixture and stir until incorporated.
  • Gradually add the all-purpose flour, mixing until a soft dough forms. If the dough seems too sticky, you can refrigerate it for a few minutes to make it easier to handle.

Baking

  • Use a tablespoon to scoop out the dough and roll it into balls. Place the dough balls on the prepared baking sheet, leaving space between each one.
  • Gently flatten each ball with a fork, making a crisscross pattern on the top.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the cookies feel set.
  • Remove from the oven and let them cool on the sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Pair cookies with plant-based milk, sandwich with dairy-free ice cream, or create a tasting party with various toppings. Store in an airtight container for freshness. Consider freezing for longer storage.
