Ingredients
  

For the Marinade

  • 4 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder adjust based on spice preference

Main Ingredients

  • 2 lbs chicken thighs (boneless, skinless)
  • to taste Fresh herbs (cilantro, for garnish)
  • 2 pieces Lime wedges (for serving)

Instructions
 

Preparation

  • In a large mixing bowl, combine fish sauce, soy sauce, and brown sugar.
  • Add minced garlic and grated ginger to the bowl.
  • Pour in vegetable oil and honey, then season with black pepper and chili powder.
  • Mix well and add the chicken thighs, ensuring they are thoroughly coated.
  • Cover with plastic wrap and refrigerate for at least one hour or overnight.

Cooking

  • Preheat your grill to medium-high heat, around 400°F (200°C).
  • Remove the chicken from marinade and let excess marinade drip off.
  • Place chicken on the grill and cook for 5 to 7 minutes on one side.
  • Flip the chicken and grill for an additional 5 to 7 minutes until it reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for 5 minutes after grilling.
  • Garnish with fresh cilantro and serve with lime wedges.

Notes

For best flavor, marinate the chicken overnight. Use a meat thermometer for accurate cooking. Let chicken rest after grilling to retain juices.
