  • 4-5 cloves garlic, minced or roasted Use fresh garlic for best flavor.
  • 2 tbsp butter or olive oil Choose based on preference.
  • ¾ cup heavy cream, milk, or plant-based milk For a vegan option, use plant-based milk.
  • ¼ cup grated Parmesan or Pecorino cheese Optional for added richness.
  • ½ tsp salt Adjust to taste.
  • ¼ tsp black pepper
  • 1 pinch nutmeg Optional for added depth.
  • Fresh or dried herbs (thyme, basil, oregano) Optional for extra flavor.

Preparation

  • Prepare garlic by either roasting or sautéing it.
  • In a saucepan over medium-low heat, melt the butter or heat the olive oil.
  • Add in the minced or roasted garlic and stir gently for 1-2 minutes until it’s aromatic.

Cooking

  • Slowly pour in the heavy cream or milk while whisking to combine.
  • If adding cheese, incorporate the grated Parmesan cheese at this stage.
  • Season with salt, pepper, and nutmeg, and mix in fresh or dried herbs if desired.
  • For a smoother texture, use an immersion blender to blend the sauce.

Serving

  • Use immediately or store in an airtight container.
  • Spread over pizza dough or drizzle on pasta.

Notes

For longer storage, the sauce can be refrigerated for up to one week or frozen for 3-6 months. Reheat gently to maintain creaminess.
