  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans (drained and rinsed)
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup finely chopped onion (red or yellow)
  • 1/4 cup chopped fresh cilantro

Dressing

  • 1 cup mayonnaise Can substitute with Greek yogurt or avocado for a lighter option.
  • 2 tablespoons taco seasoning Adjust to taste based on spice preference.
  • 1 tablespoon lime juice
  • to taste salt and pepper Enhance flavors according to preference.

Preparation

  • In a large bowl, combine shredded chicken, corn, black beans, diced tomatoes, chopped onion, and fresh cilantro. Mix until evenly combined.
  • In a smaller bowl, prepare the dressing by mixing together mayonnaise, taco seasoning, and lime juice until smooth.
  • Pour the dressing over the chicken mixture and gently stir until all ingredients are well-coated.
  • Taste the salad and adjust seasoning with salt and pepper if needed.
  • Serve immediately or chill in the refrigerator before serving for best flavor.

Notes

Great as a standalone meal or served on a bed of greens, in wraps, with tortilla chips, or garnished with avocado. Holds well for meal prep.
